But this year I discovered a lovely blog of Jewish recipes that made latkes with brussel sprouts! Kalettes being a hybrid between sprouts and kale (and my favourite winter veggie along with Pumpkin and Romanesco!!!) it seems the natural evolution of things, so following the inspiration of My name is Yeh I went and made latkes with kalettes! NUTRITIONAL VALUES (per latke) 279kcal, 4g carbs (10g fibre), 13g protein, 20g fat INGREDIENTS (make 6 latkes) 400g kalettes (300g leaves probably once you clean them from stems, you can use brussel sprouts shavings as well in lack of kalettes) 120g lupin flour (or alternatively almond flour, but Lupin is really bready!!!) 1tsp kosher salt 1/2 tsp ground black pepper 100g goose fat (or more, enough to have a 1 inch deep layer on your oven dish) 60g / 2oz red onion (shallots or leeks will be lower in carbs) 3 medium eggs TOOLS Cast Iron Oven Dish Bowl Spatula Vinyl Gloves PS: From Storey I learned that Hannukah food is usually fried because of the oil reference of course.
