Her finding to blend Almond and Coconut Flour with Xanthan gum makes a flour replacement that behaves so similarly to what you expect out of real flour used in just regular shortcrust pastry. This is real beyond keto, I think I might actually just "market" this as sugar free cause nothing else suggests any lack or deprivation anyway.
