The jelly not only brings a delicious strawberry flavour but also helps the cheesecake set so you might have to leave it for much less time in the fridge. The amount of cream to almond milk is for you to split and decide and know that almond milk could also be replaced with simple water if you want for an even more delicate flavour. The original recipe uses ground xxxxxxx for the crust as it's the lowest carb nuts you can find (3g per 100g), but of course almond will work as well.
